If you like to read fantasy on the norm, try out the Belgariad, followed by The Mallorean. Two great series compiled of five books each, written by David & Leigh Eddings.

The Belgariad is mostly focused towards a young boy named Garion in his boyhood and young adult years. It involves a lot of theology (all fictional), and a lot of diplomatical type things. The character development is amazing in quality, and the author is able to keep things humorous through the entire series.

The Mallorean is much the same way, except it focuses on Garion in his adult years. Again, a lot of theology involved in this one, but it's so well written that it hardly even seems like it.

If you like immortals, sorcery, off-hand and often cynical humor, you'll like these books.

Jorlain gives them two thumbs up!

I would also say Wheel of Time if you are up to some hefty reading :D I also agree with Jorlain on his suggestions. I haven't read thier newest series of books yet so I can give an up or down on them yet. Also if you like Fantasy I would suggest the following books by Barb and JC Hendee:
Dhampir
Thief ov Lives
Sister of the Dead.

And Jim Butcher Dresden series as well.

Trilly.
